1 egg
1 cup mashed bananas

Preheat oven to 400 degrees. Grease bottom only of 12 muffin cups.
Beat the egg slightly, add the bananas, mix of sweet, sugar, milk and oil just until moist. Pour the batter over the 12 muffin cups. Bake at 400 degrees for 15 to 17 minutes.

2 cups self-rising flour
1 / 4 cup + 2 tablespoons mayonnaise
1 cup low-fat buttermilk
nonstick cooking spray
Preheat oven to 375 degrees.
In a bowl mix the flour, mayonnaise, and buttermilk. Mix the ingredients until just moistened.
Spray 12 muffin cups with nonstick spray oil. Spoon the batter evenly into muffin cups and bake at 375 degrees for 12 to 15 minutes or until golden brown.
SPINACH CORN MUFFINS
1 cup cornmeal
1 cup all-purpose flour
1 / 4 cup brown sugar
2 teaspoons baking powder
1 / 4 teaspoon salt
1 egg
1 cup milk
2 tablespoons canola oil
1 cup chopped fresh spinach
3 / 4 cup shredded cheddar cheese
2 jalapeno peppers, seeded and chopped
Combine the cornmeal, flour, brown sugar, baking powder and salt in a large mixing bowl.
In another bowl, beat eggs. Add milk and oil for the egg and beat to mix. Fold the egg mixture into flour mixture just until moistened oatmeal. Fold the peppers spinach, cheese and jalapeno.
Spray 12 muffin cups with nonstick cooking spray. Pour the batter into prepared muffin cups until each is about 2 / 3 full. Bake at 400 degrees for 18 to 22 minutes until a toothpick inserted in center comes out clean. Cool for a few minutes before the pots. Cool on a wire rack.
